As evening falls, the Jamâa El F'na square fills with snake charmers, fortune tellers and food vendors who sell boubouches, a delicious snail soup.
Ingredients
- 1 tbsp. oil
- 2 tbsp. shallot, chopped
- ½ tbsp. garlic, chopped
- ½ cup cooked ham, chopped
- 1 cup white wine
- 1 tsp. corn starch
- 24 Wild Burgundy Snails
- ½ tbsp. fresh tarragon, chopped
- ½ tbsp. parsley, chopped
